Organizing/renaming music files/folders in iTunes always gets undone

I need to rename and organize some files/folders in iTunes media.Whenever I am done and go to play these files in iTunes everything gets undone. Even when I change the information in "get info" it will get undone if I close iTunes and then go back into iTunes. These are files I have downloaded from CDs , not songs bought from iTunes store.
