what command is causing my safari window to unexpectedly zoom in? When I zoom out with command - it does not look the same and i have to kill window and start again.

Are you referring to the "smart-zoom" feature where the zoomed area is psuedo-centred on the current cursor location? If so, it's triggered by double-tapping with two fingers (at least, on my magic trackpad and magic mouse - check your mouse and/or trackpad preferences). And it's reversed back to normal by double-tapping with two fingers (or whatever) again.
