Hi folks. Not sure I'm doing this right in terms of getting the broadest audience to answer these questions, but I'll start here since I don't have a lot of time to hunt around, and very, very little expertise. I'm doing a iphoto book for the first time and big stakes: a wedding guest book! Here are the queries:
1) The BIG question: Can you/how do you save a copy of a book project so you can experiment with it without having to start from square one?
2) Is it possible to get rid of the little watermarks on the pages? E.g. In the travel book there are 'Arrival/Departure' stamps (which don't work too well with a wedding theme) though the rest of the formal is the best.

This tutorial should give you a way: iP08 - Archiving an iPhoto Book for Editing and/or Ordering at a Later Date.
The best way is to use a new, separate library for each book and use iPhoto Library Manager to move the photos you need to it. That makes it small enough to be stored on a CD for future use as the tutorial describes.
As for the design of the pages there's no way to get rid of those graphics unless you want to design a custom layout. That can be done with an image editor that supports layers or Pages from iWork: iP11 - Creating a Custom Page, with the Theme's Background for an iPhoto Book
