I am looking to buy more RAM for my macbook pro late 2011 model, because often photoshop starts lagging out on 4gb. The question is: Can I buy one stick of 8gb's of RAM so I effectively have 10gb's of RAM, or do I have to buy two sticks of 4gb's?

You should match the RAM. I would get two 4GB sticks.
If your computer supports 16GB's of RAM, and you eventually plan on upgrading to 16GB's, then yes get the 8GB stick & upgrade to a total of 10GB's. If you do not plan on going to 16GB's, then get matched pairs for a total of 8GB's.
Yes you can buy just one 8GB stick but it is best to install them in matched pairs.
