I've got a detailed playlist on iTunes on a PC, synced to my iPhone. How can I get that exact same playlist (all songs in the correct folders, including some podcasts) onto my new iMac? Can you plug in your iPhone and sync it in reverse? Or do I have to go back and recreate all those playlists (hours dragging songs into folders)?

The iphone is not a storage backup device. The sync is one way. The only exception is itunes purchases: File>Transfer Purchases
You should copy everything from your old computer, or your backup copy of your old computer, to your new one.
