Has anything changed with Mail 6 (10.8.1) in the way you create a link - paste (or type) it and press Return/Enter?
No longer seems to work consistently…

I wasn't aware that it ever did that. I always select the text I want to turn into a link and choose "Add Link".

Yes. Very useful. After entering the text just press Return. Turns blue. A quick alternative to Cmnd+K etc
I'm wondering if it's either broken in M/Lion or is font-dependent; I can't get it to work :-(
Well, the last time I did this people practically jumped down my throat and called me a liar, but here goes anyway...
I just tested this in a Lion VM and I can't get any blue to appear. It seems to work the same as in Mountain Lion. Are you sure you didn't have some third-party Mail extension?
Mail ACT-ON and SpamSieve the only extensions.
Just to be clear: I cannot get the blue link consistently.
It used to be there.
Perhaps you have some system-wide extension that attempts to change a URL into a working hyperlink and that extension is not behaving in Mountain Lion. This has never been a feature of Apple Mail.

I enter a valid url in the body of a mail message, press return and I get this:
This is exactly as it was in Lion and Snow Leopard, so your experience is non-standard, but I don't know why.

It has been a feature of Mail since Snow Leopard, possibly earlier.
Not only have I never seen that, I have not been able to find any suggestion online that it ever did.
That is bizarre, I have seen this on every Mac I owned or still own as well as countless others, it is so ubiquitous I had virtually forgotten it existed.

You did press return at the end of the URL I assume?
I have a MacBook pro with an enter/return key. I tried every combination of modifier keys I could think of. I know I put URLs in e-mail messages all the time on my work machine and I only upgraded that one from Snow Leopard last week.

Unless I'm the lucky one and this does not work for others I have no explanation for the behaviour, as I said I have used this for so long, through so many OS's I had forgotten that there may be an alternative, sorry.
