So none of my apps would update. Literally tried to get them to update for over a month, tried everything people said and nothing worked so I've just ended up deleting them and reinstalling them.
I'm not too fussed about most of the apps but I downloaded pages for £7ish and it has ALL of my college work on it and it won't update. If I delete it will I loose everything and will I have to pay again?

You will not have to pay for it again as long as you use the same Apple ID that you bought it with.
You will lose the data if you delete it. Do you use your computer along with Pages in order to transfer your files into iTunes and the to your computer?
If you use file sharing you can transfer all of the documents before you delete the app. Read about iWorks file sharing here.
Yeah it won't let me transfer my Pages documents to iTunes. Think I'll just have to lose my college work.
What happens when you try to transfer them?
Can you go to icloud.com, log in and go to iWorks>Pages and download them

If you go to the iTunes store in iTunes, you should be able to redownload any music, books, apps etc. that were deleted.
The link is on the right hand side under quick links. Click on "purchased."
