How do I save a pages document to word format or excel?

File > Save As... > Click the down arrow next to the document title. Then check the box that says "Save copy as Word Document"
I open document, go to file, and only save shows up, not save as. I think I figured it out. I opened file, export, and exported as a word file. Seemed to work.
That works as well, what I did works with new documents. The way you did it is how it works for already saved documents.
