I find it not available to change the default fonts in Imessage on Mountain Lion.
the button " set fonts" is grey!
it's really boring to change the size of my text every times before i type in every sentance.

You need to change the background color. If you prefer, a color, change it to whatever color you want. If you don't want a color choose clear. Once you do this, the font box below it "my font color," and "set font" will be accessible. Hope this helps
