How do you edit contacts on iMac?

Brand new iMac user. Just found out that one of the email addresses in "Contacts" is wrong. I went in and deleted the old address and replaced it with correct one. But when I type in the person's name for a new message, the old adrress auto-fills in rather than the new one, even though it's no longer in the Contacts list for that person. What am I doing wrong? How do I get permanently rid of the old wrong address and substitute the new correct one?

iMac, OS X Mountain Lion (10.8.1)
