Thanks for the link. The videos I'm talking about are from iTunesU, not TV. Here are the specs for the video I'm trying to put on the iPod:

--and here are Apple's video specs for my iPod from the link you provided:

I don't see any conflict in the data provided. The only thing that's unaccounted for in the Apple specs is 'total bit rate', maybe the iPod can't handle 910 kbps.
I took a shot at iTune's conversion, but from the pace set in the first few minutes, it looked like it would take an hour to do the conversion. Not worth the trouble.
