Also depends on what those apps are storing as you use them. How many notes in Notes, how many pictures in your photo album, how many books in iBooks, how many tunes in Music? It is not just the apps taking up space, but also the files associated with each app.

What would be weird is if all your Apps are 100MB. I have 203 Apps, and all but four of them are less than 100MB. In fact, 140 of them are less than 50MB!
As has been pointed out by Michael Black, if your Apps have any user data in them, such as game results or notes etc. then you need to take that into account when calculating how many Apps you can have on any iPod. Not only that, but the iPod will "keep" some space available for that extra user data that it expects you to create.
I think you'll know soon enough when the iPod doesn't have enough room to put anything else on. The Sync with iTunes will tell you.
I have 341 apps taking 7.5GB. Granted this is a 32GB iPod Touch 4g, but the point is how many apps depends on how big each app is. If you have apps that have lots of data, such as a map app with downloaded maps, or a game with lots of images, a single app can consume a lot of storage. If you have lots of little apps, you can pack a lot of smaller apps on your iPod Touch.
You can use iTunes -> your iPod Touch name -> Apps tab and see all your apps and how much storage they are using.
