by default. How do I change this to the standard color scheme? This problems renders Pages & Numbers virtually unusable, so any help is greatly appreciated. To clarify, any file I open in either of these applications appears in a white and purple color scheme.

Use Fontbook to check your fonts. Sounds like you may have currupt fonts.

How would I go about identifying corrupt fonts? Once I identify any, I will just delete that font and that will fix my problem with Pages and Numbers?
There is a good chance that removing bad fonts will fix the problem.

Open Font Book > Select all Fonts > File > Validate Fonts

Validated and removed 6 fonts, restarted computer. This did not fix my problem. What now?
Delete the plist file from Users > your name > Library > Preferences . Delete com.apple.iwork.pages.plist. Restart the computer and try again.
This did not fix my problem. Still getting white/light purple color scheme.
Delete iWork. Best is using Yvan's script

I actually have iWork '08. I moved Pages and Numbers to the trash, then reinstalled iWork '08 from the installation CD, with no resolution.

Oddly, now Pages is fixed, but Numbers still has the color scheme problem.
Pages & Numbers colors are all purple and white
