How do I transfer all my settings, including email settings, app folders, etc from my old iphone 4 to my soon to arrive (hopefully) iphone 5? I want to insure that all my tweaks for the last 2 years are retained. Can I just sync it to itunes? Will it even recognize the new device in place of the old one?

Upgrade iTunes to the current 10.7, connect your iPhone 4, transfer purchases, backup your phone, and in your computers file system, browse to the photo storage on the iPhone and make a copy of all your photos and videos.
When your new phone comes in, connect to iTunes and restore from backup.
