Most printers have either their own Print Monitor application or you can use the Print Center application to view the Queue of the printer with past print jobs.

You can use the CUPS local web admin page to see finished jobs:
http://localhost:631/jobs?which_jobs=completed

You can delete or clear the /var/log/cups/page_log file.

I don't mean to steal Greg's thunder, hopefully he won't mind my replying.

The history files are stored at /var/spool/cups. They are the ones that begin with the letter "c". You can manually delete these files through the Terminal. Whether or not to keep the job history and the number jobs to save are set in the cupsd.conf file (/etc/cups/cupsd.conf) on lines 190 - 222. By default, the job history of the last 500 jobs is kept.

Another way to clear the list is to reset the printing system. Yuk.
