I have tried using "sudo defaults delete /Library/Preferences/com.apple.SoftwareUpdate CatalogURL" to set my update server back to defaults, but that setting is not set. My computer used to be managed by Casper and apparently they configured it to look to an corporate run updates server. Not that I'm off the corporate network, I can't seem to get updates to look to Apple's site. Suggestions?

Wondering the same thing. We have a computer that is somehow still connected to the server.
I fiugred it out. I had to delete com.apple.SoftwareUpdate.plist in two locations:
/Library/Managed Preferences/com.apple.SoftwareUpdate.plist
/Library/Managed Preferences/<USER-NAME>/com.apple.SoftwareUpdate.plist
That solved it!
