However you can create three 'email aliases' - these are additional addresses (not accounts) which deliver into the same inbox as the main address. There's a lot to be said for never giving out the main address but using aliases, since these can easily be deleted and the main address can't. Please see:

However just a the moment you probably won't be able to do this. @icloud.com addresses are being rolled out over an unspecified period: you will get one without having to do anything, and it will be additional to your @me.com address. You will get a notification email when your account is updated. Please see this page:

New aliases will be @icloud.com, not @me.com, and you won't be able to create these until your account has been updated.
As to backup, iCloud backs up your iOS device(s). It does not back up your Mac. For that you will need a third-party alternative: this page examines some options -
