My daughter accidentally logged in to my wife iCloud account on her phone. How can I logout of iCloud on my daughter's phone so that she can login to the proper account?

Settings>iCloud>Delete Account...scroll down.

It will only delete the account on the phone. There is no logout...you either turn iCloud off or delete the account.
