Below are the inputs to your EX5200. Depending if your version of Mac Pro has these types of inputs, you may only need a cable. If not, an adapter would be needed. You may want to contact 1-800-GO-EPSON or your local Apple store/dealer for more information.
Computer/Component video: D-sub 15 pin x 1
S-video: Mini DIN x 1
Composite video: RCA (Yellow) x 1
Audio in: RCA x 1 (White/Red)
USB connector: Type B x 1

Of all the options, USB would probably require some sort of software on the Mac but would plug in directly. If you have a Retina, HDMI would be the best choice and only require the cable. Else, "computer/component video", aka VGA, would require an adapter/dongle for the Thunderbolt/Mini-DisplayPort connector. Composite or S-Video are not recommended as will offer less resolution and be more noise prone.
You want to drive the projector to its maximum readable resolution, so you have the maximum available screen 'real estate". It will always be less than what the Mac has on its display, even with the 13" models.
If your Mac is relatively recent and it has Thunderbolt ports, I suggest getting a Thunderbolt to HDMI cable such as this: http://www.amazon.com/gp/product/B004CADYDO
No software needed. The OS will detect the projector as soon as you plug it in and choose the best resolution for both. Plus the cable can carry sound output if needed.
Step #1 will be connecting the two. What kind of inputs does the Epson have?
