anyone else having the issue where you can't take a call on your phones through your car? when a call comes in while i am driving it answers but then immediately reverts back to the iphone and wont connect over the bluetooth.

Yes, I am. In a 2012 Infinity M37.
As I just mentioned to Proudbird in his post, I find I have to wait a second or two from when I first hear the iPhone ring till I hear the car's system ring. I wait that time to answer the call, then all proceeds just fine.
My problem is that the phone rings, through the car speakers just as my 4 did, but neither the car Bluetooth system nor the phone itself will allow me to,answer the call.

There are numerous troubleshooting articles dealing with common issues, but I assume you're familiar with those because you've had successful Bluetooth connections earlier. Here's one of the articles just in case:

The other thing that comes to mind is suggesting that you turn off your WiFi when Bluetooth is on. No sense having the extra radio going.
I am in a 2011 Infiniti M56 so maybe it is an Infiniti issue?
That's certainly possible! Both you (Jennifer) and Proudbird have said you have Infinitis. I have a Lexus with no problem.
I have a 2011 Infiniti M37X and Iphone 5 ALWAYS disconnects when call comes in. Most times I can dig the phone out of my pocket (unsafe) and catch the call on the phone, but sometimes it just drops the call. Took car to Infiniti and was told this is a known problem and Infiniti has no solution. They said may other vehicle brands have this problem and Apple just ignores it. Unfortunately I am beyond 30 day return period, so I am stuck. Now I just drive with the phone in the cupholder. On longer drives I take a Motorola bluetooth speaker device I own. I have been trying to let everyone I know considering an Iphone to take this into consideration and with buy an older Iphone or a Galaxy III (I know both work).
I think I have found a trick with Infiniti. If I let the phone ring 2 times or more, then answer only by hitting the "enter" button in the middle of the dashboard (not on the steering wheel) it seems to pick up the cars. I don't want to jinx it but I have taken about 6 calls in a row successfully like that. I spoke with Infiniti and they said it is a known issue and they are working with Apple on it.
