Traditional Chinese (cantonese) dictation becomes mandarin

Traditional Chinese (was cantonese!!!) dictation was working fine but since the last few days the dictation text output became mandarin which was supposed to be in simplified chinese dictation input.

Any clue?
I want the Traditional Chinese (Cantonese) dictation back!!!

I've done some testing:

1, dictation WILL listen as Cantonese if SIRI is set to Cantonese-Hong Kong

2, dictation defaults to Mandarin if SIRI is set to English

This happens regardless of the input method, as long as Siri is set to Cantonese-Hong Kong the dictation can listen to cantonese, and otherwise it can ONLY listen to mandarin.

I wonder if there is any way to individually toggle dictation language? I do like siri to be in english but occassionally I wanna dictate in cantonese.

Keyth's method won't able to solve it. iPhone still use Mandarin for voice to text in Traditional Chinese due to Taiwan has great amount of users compare to Hong Kong.

Go to Settings > General > Language & Region > Region, and choose Hong Kong SAR China.

iPhone will recognise Cantonese for voice to text including Simplified and Traditional Chinese.
