E-mail deleted on iPad does not make it to deleted items in exchange

I have a co-worker who said she deleted an item from her iPad but then later needed to retreieve it. When she went in to her deleted items folder from Outlook, this particular e-mail was nowhere to be found. Are there settings on the iPad about deleted mail? I didn't see any.
