Solved the issue!

I also went to Library/Internet-Plugins and removed AdobePDFViewerNPAPI.plugin

A test user also displayed the error, so it had to buy a system folder.

Removing com.apple.Safari.plist from the folder Library/Preferences to the desktop and restarting Safari solved the problem.

Problem I had was that the PDF would open, but all it showed was just garbled letters. This resets all of Safari's preferences to the defaults, so whatever offended Safari such that it wouldn't do PDFs was fixed. May have been a flash update, since I just did do that, but not positive.

BTW just hold down option (alt) before clicking the Go menu in the Finder will show the Library folder for you to open. This file will be in the Preferences folder. Much simpler than typing in the Go To Folder... box or hitting shift-command-G.

My bad, after doing all that I discovered that the Allow Other Plug-Ins checkbox in the security tab of Safari Preferences turns this PDF-garbling effect on and off. Should be checked. whoopsies

Matt's solution worked for me, but with a slighly different name for the plugin. I trashed AdobePDFViewer.plugin and the problem disappeared.

I had the same problem, I really disliked the scrolling in the adobe acrobat mac application and after uninstalling it i could no longer open PDF in safari, it would just load a black screen.

After opening the safari folder in finder and deleting two plugins, both with "adobe" in them, It is working fine.

The file ~/Library/Preferences/com.apple.Safari.plist could not be found on my machine.
