I updated my iPad OTA in my office at work and lost nothing at all. However, I did backup and sync with iTunes in the morning at home, in case something went bad.
What you should do anytime that you update the device is to transfer purchases from the iPad into iTunes - File>Transfer Purchases - and you should backup the iPad as well. When you update the update the device, if something goes wrong, you can restore from the backup.
However, iTunes should ask if you want to backup before you update, but just in case create the backup yourself before you update. The backup contains your app data and settings - along with other items - so make sure you backup first.
If you have any other important files, you may want to transfer them to your computer as well, prior to the update.
How to backup and restore from a backup
You should backup your iPad to iCloud before updating. You will get a chance to restore from the backup during the update process. After the update and restore, your apps will automatically start to download. This can take a long time. The only thing I lost was my text messages. All app settings were restore.
it's always wise to keep backups.
updating shouldn't erase anything, but it could happen. everything you've purchased is safe anyway, as that content is connected to your apple ID, not the device. When you restore the device from an iCloud back up, it will automatically download all the apps you had, that's pretty convenient
If you're not sure if you made a back up with itunes, you can check it at iTunes- preferences - devices, or Edit - preferences - devices for windows.
There you can find all the backups of all the devices you made with iTunes. Remember: it's a local back up. Backing up with iCloud is more convenient.
