If I enter into full screen mode watching YouTube videos, the video will play smoothly, without interruption as long as the progress bar / curser is visible. If I don't move the curser and the progress bar disappears, the video will abrubtly stutter, sometimes restart. I've uninstalled / reinstalled Flash, turned on and off the HTML 5 trial, cleared all caches . . . same problem.

Open System Preferences > Flash Player then select the Advanced tab. Click: Delete All
Quit and relaunch your browser to test.

I did that first . . . no difference.
I meant to state in my original post that the problem is Safari specific. When I view the same YouTube videos from other browsers, there is no problem with the playback.
Check Safari > Preferences > Extensions
If there are any installed, turn that OFF, quit and relaunch Safari to test.
OK, I turned off all extensions, restarted Safari, the problem is still there.
I tried different videos and found that some work fine, others don't. So the issue must be something that is related to the type of video that is being played. Here's a YouTube video that has a problem in full screen mode . . . . it's the trailer for "Here Comes The Boom"
