I followed these instructions pretty carefully. My document has a lot of italicized text. When I looked at the finished document, all italics were stripped out. Why is this? 😕 It's quite annoying to say the least.😮

Change your font. Try Helvetica/Arial/Times etc
You have applied a font that does not have an Italic.

Thanks Pete... Actually, I used Baskerville which is the default when using the paragraph styles selections. Baskerville does have italics. They work just fine while on Pages, just not in my epub file.
An ePub!
You didn't mention that.
An ePub uses the fonts preset in your reader, whatever that is, and that may not be Baskerville.

Yeah, sorry about the omission. That's the whole purpose of this exercise. I followed the instructions for creating an epub file from a pages document (Apples Article # HT4168) and the italics problem popped up. I can change fonts on the reader, but the italics are still GONE. Since changing the font on the reader makes no difference regarding the italics, I must assume they were lost in the conversion process when I exported to an epub file.
Just for giggles, I also discovered that the occasional use of centered justification is also lost.
I'm getting out of my area of expertise, but did you strictly follow and apply the styles in Apple's template, down to any character styles?

Just ran Apple's ePub template through export.
1. It produces export errors (typical Apple)
2. The Italics survived where that is the paragraph style
3. Where you override the paragraph style with a manual italic it does lose the italic.
Seems like there is a whole lot more investigation to be done.
Like is it visible in other ePubs?
Can you apply Character Styles to do the italics?
Check general ePub specs to see what is possible.

Nothing is directly said about character styles. The template file that the instructions reccommend have all the paragraph styles available. It appears to be possible to change fonts from the default, but I didn't experiment much with that.
For the bulk of the text, I use the Paragraph style, "Body". The default text font is Baskerville 12. Changing character style elements turns the black pull down arrow in the style selection que to red and there are several options listed there that are a bit confusing.
Also, Whenever I open the pages document, I get document warnings, complaints that I am missing two fonts; BookAntiqua and Garamond. I don't know why these complaints arise since I don't have those fonts and have never tried to them. This happens every time I open the file. It happens to several of my Pages files.
The reportedly different fonts could be in unused templates in your Sections.
The style red arrow indicates the selected text is different from the definition.
You have three options, you can force the style definition onto the selected text by double clicking on the style name or you can change the definition to match the text, or you can create a new style with a new name using the settings of the selected text.

I Exported my copy of the template document from Apple entitled, "ePub Best Practices for Pages." I opened the rsulting epub file in BookReader and got the same problems. All modifications, such as text size, or style (such as italics) was stripped from the source file just like mine. The document is all in plain text, regardless of chosen font. I suspect there is a "problem" with this method of creating ePub files. Since I don't have an iPad or other iDevice, I can't test it on iBooks. iBooks isn't available for OS X..........
