Will the apple store unlock an i phone to use with straight talk service to change the APN to work with straight talk?

No. The cell provider it is locked with has to approve the unlock and process it.

Carrier unlocking the iPhone to use with Straighttalk is not needed. Even if you do unlock the iPhone you still will not be able to edit directly the APN Settings to change them.
Straighttalk SIMs are identified via the iPhone as AT&T Sims (as they are really. Straighttalk is just a virtual operator on top of AT&T's network).
