I'm using Mountain Lion (10.8.2) on my iMac and I have noticed that once the Startup Manager appears, pressing Option key changes the circled up-arrow icon below the selected device to a different icon. What does that signify?

That you'll just go back to the startup manager, rather than restart with that volume as the boot volume.

But since this would all happen in Startup Manager itself, where else would it take one from there? I'm not sure I'm able to visualize.
I was too tempted, at the same time too scared to try it on my mac.

Without the OPTION key, AFAIK, it'll restart the machine booting with the selected volume.
