Q: Email is stuck in outbox.  How do I access it?

Try rebooting the phone by holding both power and home button until apple logo appears and after the phone has restarted have a look at outbox and see if there is any change

I had this question too.  I found the answer on another forum where a user answered his own question.  He simply put the phone in airplane mode.  This made it so that it would no longer attempt to send data.  After that you can choose edit, then delete the stuck outgoing email.  Worked perfectly for me.

Simply turned on airplane mode - then could go in and delete from the outbox.

When I rebooted as you suggested, the EDIT link in the upper right showed active and I was able to delete the email. The airplane mode thingy didn't work for me.

Turn iPhone 6s into Airplane Mode Doesn't Work.

I have to Restarted it (by press and hold both Home + Power Button in Airplane Mode).

Then the "Edit" button active which will allow me to delete it.

OMG this is very ignoring!

Sometime affected the pictures or documents sharing via email.

TThanks so much for this great tip. This has happened to me twice and it is annoying. I went to airplane mode and then restarted my iPhone 6 Plus and then I could access the edit button in the outbox and delete the stuck email.

Neither aiplane mode or rebooting worked for me. I merely switched off my data, both cellular and wi fi and only then could I trash the stuck email!
