So basicaly I live in the UK and I am getting an iPhone 5 from the Apple shop next week or so and as you probably know the iPhone comes unlocked but I heard that the SIM you put in the iPhone for the first time is the one it locks to forever. Is this true or does it stay unlocked whatever SIM you use.
So for example if I put an 02 SIM in would the iPhone be then locked to that SIM forever?

No.
Unlocked means unlocked.
If your phone is unlocked, it will always stay unlocked. But when you change your Sim card, you might need to connect your iPhone to iTunes, to load the new carrier settings, for your Sim card to work.

That only happens if you buy from Carphone Warehouse
As Allan has said Apple retail or online only sell unlocked iPhones inc 5
they are the only source of unlocked iPhones in UK
