what happens if i change the account my wifes phone is registered to?

My wife has just bought the iphone 5 and her previous phone was registered to my itunes account. I want to set her new phone up with her own account but i want to be able to sync all her contact etc. Can i change the account her old phone is registered to without deleting all the content from the phone?

Any help would be greatly appreciated.
