how to exclude a program from start up sequence

My iPhoto and Evernote somehow made to become the apps self-started during the boot up process. This lengthens the start up time unnecessarily. Is there a way I can take them out of the boot up sequence?

MacBook Pro, OS X Mountain Lion (10.8.2)

You need to determine how is it those apps are self-starting. AFAIK, these are the possible paths:

  1. On the Lions, if you leave them running at shutdown and tick the "Reopen windows..." option on the dialog, the desktop will be restored upon return, apps included.
  2. In the user account's Login Items, as seen in System Preferences / Users & Groups
  3. In the StartupItems folders found in /Library and ~/Library (the system library and the user's library folders). Items found in /System/Library/StartupItems are normally set by the system and are best left untouched.
