When I use a template that contains my address (i.e. envelopes, fax cover pages, resumés) it inserts my address automatically. I guess I must have set this at some point, but now I've moved and would like to update it with my new address, but can't find a way to do this.
It gets it from your Address Book.
You are the Vcard with the Head and Shoulder silhouette. Change the details there.
If you want to force it onto an existing Pages document drag and drop the VCard on the document.

Another way to get to your address data: In Contacts.app, select to Card > Go To My Card.
