I'm a little disappointed that I can only use voice control for making calls & playing music. I had hoped to be able to use it to open email and talk to text. Are there any good apps that provide that?

No, Voice Control is limited. That's what Siri does, and it's not available on the iPhone 4. No 3rd party apps are allowed access to other core phone functions as a basic sercurity feature of iOS.
