Have installed new HDD, started frest install of OSX 10.6 server, then realised I had list serial number.... Now cannot get out of install... How do I quit install once it has started ?

Well, if it's stuck in a weird state during the reinstallation, wipe it, reload, and restart the reinstall? You don't have anything invested in this current reinstallation, after all.
Install will not quit
