You can only delete photos that were taken with the device or imported. If the photos were synced you need to remove via iTunes.
To delete photos that were placed on the iPad via a sync you need to remove them from the folders they are in on your computer. Then do another sync.
Start iTunes on the computer you normally sync with. Connect your iPad and select it in the left column of iTunes. In the right column of iTunes select Photos.
If you want to delete whole albums you can deselect those albums in the list.
To delete indiviual photos you need to moe them out of the albums in which they reside. Either move them to new albums or delete them. Do this part on your computer before syncing with your pad. Then sync and the moved photos will be deleted from your pad.
