How do I toggle between US English and Chinese Pinyin and French? It's very easy to mix different languages on iPad, but I don't know how to get my Mac to type in Pinyin.

Most people use the "globe" key for that (after activating the keyboards you want to use in settings > general > keyboards, of course).
