Where are seeing this Latin?
when I use Iphoto to share pictures in Email , the caption contains latin and will send the latin words out unless I click and over-write the Latin text.

That latin is just the default text in any text box in Apple print products. You are supposed to enter your own text in these fields to replace the place holders.
All other MAC's have the caption "Insert text here" filled in the box and it does not get sent out as a caption if you do not replace it. Someone recommended recreating a new catalog and that might solve the issue . Recreating a new catolog and adding the old picture back in can be very time consuming.
