I am working with Logic Studio 64-bit on a Mac Pro Quad-Core 2.66 500 GB and have the maximum 16 GB RAM installed. However, the memory usage maxes when I use only one or two RAM-heavy instruments (two tracks with Omnisphere are usually enough), and I get nasty digital clicks.
What am I doing wrong?

In the Finder, select the Logic Pro application, and press Command I

Yes, positive. See attached screenshot of the CPU-window. It always looks like this, and this is with 5 audio tracks and one soft synth!

This is a CPU overload, nothing to do with RAM.
Try reading this:

If you are fully using Omnisphere's capability, you are for sure overloading the active core.

..and to finish this thread: The problem was indeed a reset of the buffer size to the minimum number of samples (32). With a buffer of 512 or 1024 there are no longer any problems, of course.
