For one of my assignments in college i have to choose a business organisation and write a brief introduction to it explaining its, products/services, history, background information, aims and objectives and competitors. For this assignment I have chosen to write about Apple but i'm finding it very difficult to find any information about this..

The only way to do this is via research, largely through the internet, Google, Wiki etc and books written by or about Steve Jobs more than anyone. What I do think is that while the growth and development of Apple's style is important, the key to a project such as yours is the philosophical angle. Interesting personal observations from this direction are more likely to stand out as original thinking.

Strange. If I go to Google and search on 'Apple Computer Inc' together with some of the topics you have mentioned I find a lot of stuff to delve into. This is also a good place to go.
The authorized biography of Steve Jobs published last year contains all the information you want.
I am surprised your college does not have it in its library.
The history of Apple is so well known, and so much has been written about it, that I am surprised you are finding research defficult.
