How do I set default JVM now Java Preferences has been removed?

The latest Java update removes the Java Preferences application, I have always found this useful for setting the default jvm, how do I do this without the preferences appp?

WRONG! The Java Preferences pane accessed from System Preferences does not allow you to switch among various Java versions or to reorder them so that applications can choose the first compatible version.

This is already the case when Oracle's Java SE 7 1.7.0_09 and Apple's Java SE 6 1.6.0_35-b10-428 are installed. (The latter is the latest from Apple before the "Java for OS X 2012-006 1.0" update just released.)

A few of us have installed the latest java udpate. We have 1.6.0_37 installed but we do not have a java option anywhere.. below is a screenshot. Can't find anything in spotlight either.

I am trying to troubleshoot Chrome / Safari not running sites with a java app (browserstack), hence why I need to get into the preferences.

Not sure where else the pref pane would be..
