Is it possible to recover lost data (notes, calendar) on an iPod Touch 2nd generation that was synced with iTunes? (iTunes is set up to sync the data with MS Outlook 2010.)

Before you sync or recover deleted data from iPod Touch, I believe that iTunes will create a backup of your iPod contents (unless you manually cancel this backup). The backup will contain the information that were on the phone.
You can check if a backup was created by doing the following:
Launch iTunes
iTunes > Preferences > Devices
See if there is an entry with the date of the restore.
