I click "calendars" in the top left corner of the calendar app. There I have six calendars where I have the option to check or uncheck, depending on which calendars I want displayed in the app. When I uncheck a calendar, it will not remain unchecked. Also, with the update theres a new option, "contacts' birthdays..." I have NEVER wanted that feature, but its one of the items that will not reamin unchecked.

Try a reset: Simultaneously hold down the Home and On buttons until the iPad shuts down. Ignore the Off slider if it appears. When shut down is complete, turn the iPad back on.
