desktop application for producing valid epub

Is there any desktop software that I can use to create valid epubs that will be accepted by iTunes.

I know there's Smashwords and other aggregators as well as stand alone softwares. But the aggregators have their terms and conditions and the other software, I couldn't find one which had good reviews and which guranteed to produce a valid epub for the iTunes store.
