I am curious why you want to turn it off. Maybe something can be done for that.

It's always off. There is no gyro in an iPhone. There's a position sensor and an accelerometer.

I stand corrected. Apple needs to be corrected, however; what they are calling a "gyro" is an orientation sensor.
But that still doesn't answer your question about what feature of the iPhone the OP wants to defeat.
When I travel I download my boarding pass to my iPhone. It is annoying when I give it to the attendant to scan when boarding because the position sensor always changes its orientation. That is one of the reasons unless there was a way to lock the orientation in place.
There is a way to lock the orientation, described fully in the manual (which is worth the time it takes to read it).
Double press the HOME button to display the Quick Launch ribbon at the bottom of the screen. Scroll it from left to right to see the orientation lock icon.
Double tap the Home button. Swipe all the way to the left. Tap the icon that has an arrow going in a circle. A padlock will appear in the center. Your iPhone is now locked in portrait mode.
