No mirroring option

I have a mid 11 mac, ipad 3 and appletv 3. I can airplay from my ipad to my ATV3 and from Itunes to ATV3. How do I stream from mac to ipad3 and from mac to atv3 (this without using iTunes). All devices are on the same network and same router but different IP DHCP. When i enter preferences then displays it doesnt offer me an option to airplay and there are no displays listed. Any help will be greatly appreciated. Have a nice day.
