Where are the settings that allow me to open 3rd party apps and install them on my iMac?

There are no settings unless you mean the security settings.

I'd actually recommend you NOT set it to "anywhere." Instead, if you right click the item in the Finder, you can then elect to "bless" the application as safe.
This maintains the security from Gatekeeper, for the few exceptions that haven't been updated to support Gatekeeper yet. You only have to do it once per application.

If you are only doing this once in awhile you can also "control-click" the program icon to open the intsaller, leaving your security settings in place.
