How do I delete contacts?

I am setting up my new iPhone 5 by restoring from my iPhone 3. This has worked fine except that somehow I've managed to pick up all of my boyfriend's phones contact telephone numbers and calendar info!

Are you guys sharing the same apple id? Go into icloud and sign out of his id and sign back in with yours.

Go into contacts and tap the one you want to delete then tap edit and scroll right to the bottom then tap delete contact.

Ok...so I deleted the contacts that I didn't want and backed up my old iPhone 3 again so that when I restored my iPhone 5 from the backup the contact list was correct. This worked and I thought I had cracked it however when I then made changes to my apps and my music (because I wanted to change things for my new phone and get rid of things I didn't use) and clicked apply, for some reasons the old contact list appears on my iPhone 5!?!?
