How do I transfer to Mac?

I received a notification for my iPhone OS update. However it told me there are items on the phone that have not been transferred to iTunes? How do I manually transfer whatever items haven't been transferred? I thought one of the marvels of Apple stuff is that it all "just worked". Why doesn't the transfer happen automatically?

Totally automatically? I would hate that. I do not want computers controlling my life and removing all decision making. Yes, you will still have to click on a button or two, so bear with it if you can..

Maybe you wouldn't want it done automatically. I suppose you could be updating using a public computer in a library. We used to do that before we upgraded from a telephone landline modem for Internet.
