I have a mac mini late 2012 and I have two ASUS PA248Q monitors and I have one connected through the HDMI port, and I would like the other to connect to the thunderbolt port. The monitor has a regular displayport connection. What type of cable or connector do I need to connect it to the thunderbolt port? Will a regular displayport to a mini displayport work in the thunderbolt port?

You only need a DisplayPort to Mini DisplayPort cable to connect the monitor to your Mac mini. Thunderbolt is compatible with Mini DisplayPort and you can use it in Thunderbolt Macintoshes
I have a displayport to mini displayport cable comming from Monoprice; 10 foot under $6 and its Apple white.
I, too, have a late 2012 mini and a Dell u2711 monitor. I picked up this:

and it works like a champ! Just remember that you may have to go into your monitor's menue to tell it which port you are using (in this case, set it to display port). Good luck!
